I am looking for a first Japanese knife, and as my wife and I are vegetarians, decided that a Nakiri is what I want to first. I was amazed to find so many different ones available and so seek your advice about what may suit us.

I have identified four that you sell that appeal to me:

Dojo Hayashi Nikiri 165mm at $79.95

Sakai Takeyuki Damascus at $155 (very handsome, but very expensive)

Tojiro DP Nakiri 165 at $69.95

and Tojiro Stainless Wa Nakiri at $74.95. (do the two Tojiro's have the same steel?)

There are others that you sell that could easily make the list as well - many are quite beautiful, but I want to start with performance first, although fit and finish are also important.

I know that the four listed above vary widely - in handle style, in steel, etc.

My wife and I are right-handed, haven't ever owned a rustable knife, so lean towards stainless, but see the advantages of a hard core knife with stainless cladding as not requiring much extra care, but perhaps offering a better edge.

I would like the knife to be a good introduction to Japanese knifes, but not be too expensive as we are inexperienced with Japanese knives. I would like it to be relatively thin behind the edge. I am pretty good as sharpening, so I don't think that is an issue, but would like a knife that takes a wonderful edge, and holds it a while.

Anyhow, I would like your suggestions.

Hi Harvey - The Tojiro DP Nakiri: http://www.chefknivestogo.com/todpna16.html which you listed is a really good basic option. The DP is a better performing knife IMO than the Tojiro Stainless Wa Nakiri.

Mark's Richmond Artifex Nakiri http://www.chefknivestogo.com/riarna17.html is also a really good knife. It's a little thicker at the edge OOTB than the Tojiro, but it's made of great AEB-L stainless steel that sharpens easily for a stainless and gets really sharp. If you're comfortable thinning the Artifex a bit behind the edge or even just grinding down some of the edge bevel shoulders, it has a lot of potential.

The Sakai Takayuki you mentioned: http://www.chefknivestogo.com/satadana160.html is a really nice knife. It's a beautiful blade in person. It's also made of AEB-L stainless at the core, but instead of a mono steel blade, it's got stainless, nickel hammered Damascus cladding.

You should really also consider this Konosuke HH Nakiri: http://www.chefknivestogo.com/kostna18.html. It's on a great sale right now and it's definitely the best performer of this bunch, plus it's got a bit more blade height at about 50mm, which many Nakiri users like.

Out of these choices my absolute #1 would be the Konosuke if you don't mind a Japanese (Wa) handle - it's an awesome Nakiri, trust me :-).
#2 choice for performance/value OOTB is the Tojiro DP.

Good Luck - Mark has a lot of really nice Nakiris these days.

A happy medium between budget entry level and top of the line.

I'd have to get the Konosuke HH in this price range. The extra 15mm in length and the knife itself are great.

I very much appreciate all the advice and valuable analysis in the posts above. I have been spending quite a bit of time looking at all the options, making the comparisons between makers, steels, handles, and finishes- more choices than a mere mortal should have to review! I am getting closer to a decision - and trending towards the somewhat more expensive (rather than the entry level) nakiris on the principle that I should try to insure that I have an excellent first Japanese knife experience. While I think the satisfaction and pleasure will be found in the knife's actual use, I also have begun to value the way they look, showing the methods of their making. I have been watching many of the available review videos and have found them very useful in understand these more intangible qualities. The whole experience has, so far, been very interesting, and hopefully will soon culminate in actually owning, handling and using a real knife!
