Hello sir,
I've bought a few knives from you all which were konosukes, the pride and joy being my blue #2 Fuji gyuto. I am looking for a stainless steel that cuts as close to the Fuji series as possible, open to any advice you can give!

Hi Tyler,

I'm really glad you like that knife. It's a favorite of mine.

Try the Konosuke HH. It's fully stainless with similar fit and finish and it's a thinner knife. Excellent knife for the money: http://www.chefknivestogo.com/ko24wa.html

If you want a knife with a similar feel to your current one try the Takayuki Ginsan. It's made in sakai and it has a similar feel to the Fujiyama series: http://www.chefknivestogo.com/satagiwa24.html

Nearly any laser will cut as well as your current knife.

Richmond Laser - AEBL being the stainless version
Nearly any knife from Konosuke - HD2 and HH being the two stainless choices
