Hello CHTG'rs!

Happy holidays to everyone!

I am thinking to add a nakiri into my collection.
There are not much information available about black steel and nubatama knives in general. Could you please share your experience with this knife maker and steel if you can. How tall is this knife? Or if you know any other great nakiri I would like to here about them as well. I am looking for hybrid something between cleaver and nakiri, more on nakiri side, 180mm or longer and taller than 55mm.

Vova, I just did videos for a bunch of Nakiri knives. Most of them are about 165-170 on the edge. The Masakage Nakiri's are among the tallest at 59mm. They are very nice. I'd probably pick the Shimo for the best performance if you don't mind an all reactive blade. Here the video on that one: http://youtu.be/I0euxCXV_KA.

Takeda also makes pretty tall Nakiri's at about 57mm.

I don't know anything about them. I'm someone can weigh in w/an opinion. Just from looking at the Nubatama photo, it doesn't seem to be super tall, maybe around 50-51mm for a guess.

I just finished sharpening my nakiri. 10 deg bevel at 0.1u.

Protip: It's hard to type on the iPhone with bandaged fingers.

Hi Vova....

Not sure about the Numbatoma...

But...I have have the Takeda Nikiri, and although it is a bit pricey, I absolutely love this knife and seems to be one of the sharpest in my collection. Very very thin and sharp knife. Takeda's are special. ;-)

I have the AOS version, not the stainless clad. This is the knife that stays on my cutting board at all times. It's crazy good.
