The Misono is ground pretty evenly all the way down to the micro-bevel on the edge and then there is an asymmetric grind on it. It's no problem to use this knife if you're left handed. Also, the first time you sharpen it you can easily grind the edge evenly if you like. The is no iron cladding on this line of knives. It's a mono steel knife.
