I want to purchase my first Japanese knive.

1) Want a Gyuto 240 or 270mm
2) I'm right handed.
3) Want Japanese style handle.
4) Home use, for vegetables.
5) $500 to $550 range.
6) Learning to sharpen on my Edge Pro on my Wusthof, and Henckels.

for that price i would be getting a midtech/semi custom knife from the premium knife makers like murray carter, butcher harner, stephen fowler etc.

In that price, yeah, your options are quite open.

As franz said, a custom isn't out of the mix and certainly a great choice.

Anything hand made from Konosuke would be incredible.....the Fujiyama line, the Ginsan line, etc.

I mean....there are so many choice it would help to narrow it down a bit. Do you want/need stainless, do you have any other likes/dislikes (shape, flat profile, narrow, tall, etc.).
