 Post subject: Moritaka or Takeda Gyuto?

Ive been cooking of years using nenox s1 and ux-10 , lately ive been considering giving the carbon knives a shot. Seems like they get way sharper and for way longer. So I wanted to ask your opinion on
Moritaka gyuto Super Steel 240 and takeda 240 from what I can tell they both are great knives, I just wanted your opinion on each of these knives . I also wanted to see if the sayas you carry fit the moritaka.

Hi Scott,

Check the shapes and see which one you like best.

Then check the prices.

They're both good knives and fun to use. We sell them both really well and the steel is the same with very very similar heat treat. Takeda's have a different edge on them and they're a tad thinner.

Yes we do have sayas that fit usually. If you buy the universal 240 saya and the Moritaka I will make sure I fit a saya for the knife before it ships.
