1. Are you right handed? yes
2. What type of knife are you interested in (gyuto, nakiri etc..) gyuto
3. What size knife are you looking for? 210 (probably, 240 feels too unwieldy)
4. Do you prefer carbon or stainless steel? stainless
5. Do you prefer a western handle or a Japanese handle? doesn't matter
6. How much did you want to spend? 80-120
7. Do you know how to sharpen? yes. a bit. with the edge pro.

Hey all. I'd love some advice. I purchased a Fujiwara Gyoto 210mm and I love the knife and how it cuts. However, it feel just a bit too short for me to use as I'd use a Western Chefs knife. I have an old Wusthof that I'm used to using.

Can someone recommend a taller knife that I'd likely enjoy? I saw someone recommend the addict 2, which at least looks taller in the photo. a smidge pricy for me though.

How wide is the Fujiwara 210mm?

Adam - I think the FKM 210 is around 43mm tall at the heel.

Scott - I looked around the site for options fitting your criteria. I found a couple of possibilities. You'll need to get definitive height measurements at the heel from Mark or someone that might own one of these.

Option 1: Suisin Inox Gyuto 210mm - http://www.chefknivestogo.com/suisingyuto2.html
From viewing Jason's video on this knife it looks to have decent height. He didn't measure or give the height on the video that I saw. It is out of stock at the moment.

Option 2: Tamahagane 8" Chef Knife - http://www.chefknivestogo.com/tamahagan ... knife.html
Again - this looks to have more height but no measurement is given.

My personal sweet spot for 210/240 Gyutos is the 47-50mm range.

The Richmond Addict and the Richmond Artifex 240 Extra Tall are about 55mm tall at the heel. These are very tall blades. Make sure you want something that tall.

You would have a number of options in carbon steel knives if you can't find a stainless model that fits your requirements.

Option 1: Tanaka Kurouchi 210 Wa-Gyuto - http://www.chefknivestogo.com/taku21wa.html
In his video, Shaun measured it at about 48mm at the heel.

Option 2: Yamashin White #1 210 Gyuto - http://www.chefknivestogo.com/yawh1gy21.html
This one is about 50mm at the heel.

If you've not tried a 240mm (stems from your "probably, 240 feels too unwieldly" comment) I would suggest that first.

Otherwise, not sure of any 210mm gyuto's that are much taller than that knife. A 190mm santoku might be a good compromise:

Yep, I just measured and the FKM is right at 43mm. I think 47-48mm would be perfect.

So how about a 210 gyuto that's around 47-48mm?

I very much like the Tamahagane suggestion. Anyone know how tall it is?

Regarding the 240, will it be taller? I could try the FKM 240, when it gets back in stock.

practically any 240mm gyuto will be taller than a 210mm gyuto

Yeah, the size difference between a 210mm and 240mm gyuto is fairly substantial. It grows up too. :)
