Adam - I think the FKM 210 is around 43mm tall at the heel.
Scott - I looked around the site for options fitting your criteria. I found a couple of possibilities. You'll need to get definitive height measurements at the heel from Mark or someone that might own one of these.

Again - this looks to have more height but no measurement is given.
My personal sweet spot for 210/240 Gyutos is the 47-50mm range.
The Richmond Addict and the Richmond Artifex 240 Extra Tall are about 55mm tall at the heel. These are very tall blades. Make sure you want something that tall.
You would have a number of options in carbon steel knives if you can't find a stainless model that fits your requirements.
