 Post subject: Richmond Artifex 240mm Extra Tall better Global?

Hi, I have a question about the Richmond Artifex 240 extra tall.
I'm looking to replace my old Victorinox fibrox 10 in. chef and the Artifex falls right in my budget plus the profile looks really good.
I'm a home cook, but I cook a LOT, I can't eat out as I have celiac disease.
I'm wondering about AEB-L steel, my 8 inch chef is a Global G-2, I love it but I'm not that impressed by the edge holding.
How will the Artifex's steel compare to my Global G-2 ? Does it sharpens more easily than the Globals ?
FYI, I sharpen on water stone (been praticing for 2 mounths now) with a 3-stones Naniwa (400/1000/5000) super stone kit.

Hello Philippe,

I designed my knife to have a nice profile with excellent steel. AEB-l will take a wicked edge and it will hold it well. I sell Globals and their steel is a little too soft to hold an edge.
So, I think you would enjoy it. Hopefully you will get some other opinions.

You will certainly enjoy the Artifex over the Global IMO. It has a better grind as well as steel. The AEB-L will take as good of an edge as you want to put on it.

The only thing you want to look at is whether you want a taller knife than your Global, or something similar in height. The extra tall will be taller than your Global, and the regular artifex will be about the same height. Both knives will outperform your Global. I personally prefer taller knives, but I know some people who prefer shorter. Taller knives tend to chop better due to increase blade weight, as well as scoop more ingredients, but the added weight may turn some people off, as well as not having as nimble of a knife.

The Global steel is one of those I was just never impressed with.

The AEB-L Artifex's will sharpen easier, take a better edge if you have the skill, and stay sharp longer.

The Artifex 240 (not extra tall) was the first REAL knife I purchased. I love this knife. Great durable handle, nice rounded spine, and great steal. It is pretty easy to sharpen, even for someone new to sharpening. Holds the edge great. This is a great knife with an even better price.
You will not miss your Global.
