 Post subject: Feedback on these two knives

Hey folk's. Just wanted some feedback on some knives. Im really torn between the 2. Hiromoto AS and the JCK kagayaki Carbonext. Over all opinion on both would be greatly appreciated, especially from fellow pro's who use it on the line and during thise crazy long prep days.

in my opinion for the most part the carbonext is a step below the hiromoto.

the hiromoto is clad in stainless and is blue steel which is carbon, which will rust if not taken care of if not careful. probably harder than the carbonext.

the carbonext is semi stainless, will also rust but not as bad as carbons do. one kind of steel. will patina but instead of making blues, purples, yellows and such. will patina hues of grey.

both are ground 60/40. both are loved by many. both are easy to sharpen.
