Here are a couple I would suggest you look at:

I love this knife by Konosuke. This is what I would get if I were you. It's thin, light, hard and super sharp out of the box. The fit and finish on this knife is great and the steel is top notch:http://www.chefknivestogo.com/kogy24.html
If you have some questions on other knives let me know. Shuns are pretty good knives but they're kind of common and not as good as the above in my opinion.
