Looking for a stainless 120mm paring knife that I can use off the board (peeling/etc)
but also on the board like a petty.
That can also take a beating.
budget is $80.
(Basically a knife that cuts well enough that I can enjoy using,
but also cheap enough where I dont feel guilty using it on tougher jobs. )

Considering the hiromoto ginsan 120mm petty, but dont know alot about the maker or the ginsan line.

any recommendations?

Great little knife....I liked mine, but not the size. 120mm wasn't right for me so I sold it.

The nice thing about the masamoto is it has a POM handle so it's tough and stable. The blade is real good too and it's in your price range.

I don't think it would be noticeably different, but $20 is not much in the long run. Get which one you like more.

Looks like the Hiromoto has a pointier tip. That means it'll fit deep into an apple or potato or something, but it also will break off a little easier. We're really splitting hairs, I think.
