Hi,

We love your site.

My wife & I are looking to upgrade our knives...we don't use the rocking motion much, and have never used wa-handles before. So far, we're getting a Mac Pro Utility 150mm & a Tojiro 270mm ITK bread knife, now we need a gyuto.

While I'm very curious about the 270mm, my wife is not. Shall we stick with 240mm? or should I get 270mm and let her use our old 8" sharpened up (We're getting an Edge ProFull Monty, and have a large cutting board.)


Options:


-Mac 9 1/2
-Masamoto VG 240mm
-Kitchuiki 270mm
-Konosuke HH

Hi Eric,

I took off the one we don't carry since I've never tried it. The Tad we discontinued a couple years ago because the Konosuke is basically a very similar knife and I like it more and it never sold.

So,

Get the 240. It makes no sense to freeze your wife out on the fun if she's not going to use the 270. I find 270s too large and I'm 6'3" tall so unless you're doing prep work at a restaurant go smaller.

Of that group of knives I like the Konosuke. It's really fun to use. All of them are good knives but that one stands above the others I think.
Get it with the ebony handle. You won't be dissapointed:

The konosukes are very light and thin. A 240, although probably larger than you are used to will not feel like it because it is so light.

Very nimble knife that almost everyone enjoys using.

I just find that the HD has better edge retention than the HH at a better price as well......

He chose the HD Custom with koa handle we had. That was a sweet knife.
