Hi Mark,

Thanks so much for your prompt response. Those knives you listed below look very nice-I just need to save up a bit to buy one :). I was wondering if you could answer the same question below for these two Fujiwara knives. Are they also asymmetric or are they 50/50.

Hi Ben,

All the fujiwaras except the honesuki are ground the same basic way. They are thin and have a tiny amount of convexing on the right side of the blade and little if any on the left. It's hard to see buy you can tell if you lay it on a piece of glass of if you use your fingers and pinch the blade and slide your fingers from spine to the edge. The tiny edge is assymetric at about 70/30. That said these will work for right handed and left handed users. Also you can easily sharpen the knives evenly once you have them and it won't make a bit of difference in my opinion.
