Hi all,

I'm about to buy a new set of knives, at least a new gyuto (210 mm) and a new petty (150 mm). And I've almost pulled the trigger on the Richmond Artifex gyuto and the Richmond laser petty or the Hiromoto ginsan petty.

However, I am not quite sure of their blade profiles. My cutting style is a mixture of push cutting and rocking. I currently have a set of Zwilling knives and a set of Global knives. The Zwilling chef knife is much too heavy and has too much belly for my taste. The Zwilling petty/"meat knife" (200mm or so) is much better and I like its profile. The profile of the Global 210 mm gyuoto is pretty much perfect for me. I just want a better steel and a better handle. I also like the curve/belly of the Global (150 mm or so) santoku knife, but don't like a santoku as such.

What I am concerned about is whether the Japanese/Richmond knives have enough belly for me: it's not just push cutting I do, but also some rocking.

Can anyone give me advice on this? Or compare their profiles to those of the Global knives and the Zwilling petty, which I like?

i think the hiromoto profile is alot closer in profile to a global chefs knife than the artifex.

Can you either get us some pictures of the knives you want us to compare too or links? There are just too many Global chef's knives and too many Henckels knives that come close to those descriptions to accurately provide advice in my opinion.

Here is a a link with a picture of the Global Chef knife of which I like the profile. It has some belly, but not too much (like the Zwilling).

Sorry I missed this reply. :o

The Global G2 has a rather typical gyuto profile....maybe a touch on the flat side.

Without having them side by side, which would be nice, I'd say the Artifex will have slightly more belly but nothing like a German chef's knife would typically have.

Thanks, then the Artifex it will be :-) . My only concern was that it shouldn't be flatter than the Global.
