Hi,


I would also like to know your opinion on the Tamahagane knives versus the kaizen by Miyabi. Which one do you prefer/recommend and why.

I like the Tamahagane a little better. Both of these brands compete with Shuns and are pretty good knives. That said I don't recommend them very often since I think there are better choices in that category.

If you want a wa handled knife try the Konosuke HD. I think you would like it more. Or try the Sakai Takayuki Hammered damascus.
