Mostly finished up (missing a stencil and a few small scratches) a 240mm western handled gyuto this weekend.

Handle is stabilized, spalted maple.

Edge sits right at 0.01" at the heel and and 0.008" near the tip.

Did the knife have a bolster before you rehandled it? If so, did you reuse it?

I made the entire knife from a sheet of steel, a block of wood, some pins/bolts, and a piece of stainless steel for the bolster.

I don't do just rehandles. :)
