2, 240mm and 1 210mm Blue Honyaki gyuto's arrived today!! One of the 240's is mine, the other 2 Honyaki are going to get custom handles made up and sent back to CKTG.

Honyaki's are a little thicker than other knives, but look at the grinds on these!!! Nice convexing and thin behind the edge should make these incredibly powerful cutters!

Now I gotta figure out what to use for a handle!! That may be on hold for mine though, I ordered 3 sets of scales of Blue Mammoth Tooth, so I may be using that!

Decided to use a set of Blue Mammoth Tooth scales and some really nice blue Burl I picked up today. Pics weren't cooperating, so these are a teaser, I will get better ones tomorrow!

Black paper Micarta end cap to the ferrule, 2 layers of Tooth scales, 1/8" blue G10, more Tooth and G10, Black Paper Micarta end to the ferrule, then the really awesome Blue Burl I got today!

Sharpened it up and used it a little today on Peppers and Pepperoni, cut very smoothly!

Thanks!! I wanted to do this one way over the top of anything I had done before for myself; this knife is my Birthday Present to me :) It was a bit more complex to glue up and drill the various ferrule pieces and work with that type of approach, so I wanted to figure out a way to do that. I liked the stacked tooth ferrule and I will do them in the future but they are pricey!!

Now Aaron is REALLY going to have a hard time topping this handle!!! LOL.

haha. Think much like the "gunslinger" persona, he's in retirement until the time is right. :) The next handle will be classy and elegant. But don't worry, the gunslinger will return ;)
