I'd like to try the UX10 tried the Kohetsu, beautiful knife however I didn't care for the blade profile / flat spot / belly whatever you care to call it

kohetsu for me, I have used several misono's from different lines... they all have great f+f and are very good knives.. just to over priced for what else is out there...

UX10 series are nice, but the Kohetsu line is a better value with such great steel and VG F & F.

I can't answer as I haven't used a HAP40 Kohetsu? I have learned the Misono UX10 is an exceptional knife in its own way, but not everything which makes it "exceptional" is good. Good alloy, believed to be 19C27; great handle; exceptional styling; but too streamlined to be comfortable for anyone who's pinch grip doesn't come over the top. Forever ago, it was one of the first "super knives" imported into the US which really kicked Shun and Global ass; but it's time has pretty much passed. So... maybe not so exceptional after all.

Obviously, the HAP40 is a premium steel, but I haven't experienced it's feel. Beyond even proprietary heat treats every steel has a different feel. Sort of like SG2, a premium steel that I just haven't resonated with albeit only using one blacksmith's iteration.
