One of my favorite outdoor knife manufacturers is Bark River Knives. They have three kitchen knives in their lineup, namely, a parer, petty, and a large Santoku. Anyone ever try one of their kitchen knives? I know making a good hunting knife and good kitchen knife are two different paradigms.
I have a santoku, pettyZ and a paring sized knife. They make good knives. They are more heavy duty than what we often expect, so their petty z is comparable to a hankotsu. The Santoku is a bit longer than what we expect but in s35VN, it is an excellent cutter. And their warranty is exceptional. If something happens to it they will fix it. Period. The knives come in a wide range of sizes from blades that can entirely fit in the hand to machete sized blades.
