Will the HAP40 gyuto geometry be a laser, Artifex or somewhere in between?

Also , as a semi stainless, how much care needs to be taken with it to prevent rust?
Will it need to be washed and dried after prepping a home meal or can it wait until after dinner?

Inquiring minds need to know

Douglas

Hi Douglas,

It will be laserish. Like the kohetsu and thinner than the Artifex.

HAP40 is mostly stainless. Basically if you wipe it after you use it the steel will stay shinny. It can easily wait a while and it won't stain or rust like carbon steels.

I am not familiar with HAP 40. It sounds very similar to CPM M4. Is there a composition chart on it?

Thanks! Good looking stuff. I wish the Japanese would export their steel more. It's hard to get.

I could be wrong, but don't they like to keep their steels "local" to ensure they are being used correctly or something like that? That is how I understand it anyway and why US companies that use Japanese steels typically have their knives manufactured in Japan.

I've heard that before as well. Makes sense, I guess. But then people in the US can buy the stuff, so it's not impossible.

As I understand it, the blades have to be made in Japan and then shipped as a blank to the US. That is why you see steel with different names but the same composition. ATS -34 is the Japanese version of CM 154. Boehler M390 is the Swedish version of CPM 20CV or vise versa. Then you get little tweaks here and there. Most powder steels are VERY comparable. Are the Japanese shipping barstock over here?

You can only get large quantities at a time as I understand it, but they will sell. Not sure if it's barstock or not, I can imagine they'd do it in sheets at large quantity. I've been wrong before though, someone please correct me if I'm wrong here.
