I use a cheap carborundum stone as my coarse grit (which will be replaced by a latte stone eventually) i first a raise a burr on each side, then a nubutama bamboo gold 1k stone and raise a burr on both sides, then my suehiro rika for refining. in between each i like running my knife through a cork from a wine bottle, or the hard felt block.

the way i sharpen is a combination of what i learned from you guys and what i learned from murray carter's videos, special mention to jon of JKI and ken on certain things as well.

when i need to thin a knife, i use the carborundum stone and then take my time to refine the scratch marks and work with the 1k. and if needed i will use the rika 5k as well.

when i need to maintain an edge and not really sharpen it completely i take a few passes on the 1k then the rika. but it depends on how badly the edge needs to be fixed. if i can get away with a few strokes on a loaded cheap barber's leather strop, i'll do it. but i'm not satisfied i go through the motions of the stones til i am happy. but if the edge really doesn't wanna stay sharp long enough, then i'll sharpen it all the way down to a coarse stone til the rika. if i want further refinement i use the strop, but that usually isn't the case. sometimes i make things worse with the strop, but it depends on the knife and the type of steel it is.

i am saving up for the nano cloth and the diamond sprays =D

Touch my knives up at least 3-4 times a week to keep that razor edge.

On my blue steel gyuto I use Chosera 1 and 3k, then the Rika and polish on the Kitayama. Sometimes I use a chunk of Chosera 10k I got cheap, but as I get used to the Kitayama I use the Chosera less.

follow up i use my lansky sharpening system stones but i use them by hand. They are little but it gets the job done i use the fine yellow stone and then the blue saphire stone. I also have an old belt that i ripped apart and use the inside of the belt as a strop, it seems to work. I also keep up on my blades with a DMT ceramic steel.

Eventually i'll get some chosera or shapton stones :(

Mix and match various stones depending on the knife and what needs to be done

gesshin 400 if I need to fix or reprofile
binsui
king 1000 (need to replace this one)
gesshin 2000
sun 6000
takashima awasedo (usually to finish)

a few that I need to pick up - an intermediate stone to replace the king 1K, something a bit finer (maybe a monzento?), a kitayama, and a naniwa 10K

I use Norton stones. Start out with a 220 if the blade is no good but typically use a 1k 2k then a 4k and finish with a 8k polishing stone
