I've been wanting a R2 steel knife with a octagon handle for the longest time but for international customers they only sell to retailers and wholesalers. :x

...mmmm are you sure this is R2 steel?

As far as my limited knowledge goes I tought R2 was a proprietary steel from Kobe used by Itou to make knives....??

I have one of Itou's abalone R2 units and it takes a really wicked edge and keeps it awhile too.

If I'm not mistaken, Mr. Tanaka used to use R2 in his Damasus Gyuto, but I think the steel has since switched. Pretty sure Rick has one in R2. Always wanted to try that stuff! :mrgreen:

Oh yes its definitely R2. They even have a line where they harden these suckers to 65-67 HRC and its flexible!! These takamura brothers are awesome!

I have two Tanakas in R2. It is sweet. I think Tanaka is currently using sg2.

The takamura knife in the picture is made with SG2 steel and www.thebestthings.com carries it. Takamura also carries R2 version of the knife at www.knifewear.com. They carry them for about twice more expensive than SG2 version (270mm sujihiki for around 750 canadian dollar). I have an event with Sakai san from iron chef last week and he uses this particular sujihiki and it cuts and looks amazing!!! (his sous chef's nenox slicer with red coral handle looked cheap next to it)
