I have watched a few videos of Ben Dale using the EPA and he recommends using the ep 120 for thinning the knife I assume not reprofiling can someone explain?
Also on his website he says don't reprofile to a real thin edge cause it makes a knife hard to sharpen he explains a process that seams like he is talking about a micro bevel but says its not a micro bevel please explain if possible?

I've asked this question before. There is some seemingly odd advice on the EP website.

The EP 120 stone is just miserable. Cuts like a marshmallow. Get the Nubatama Bamboo 150.
