Dear Mark,

I bought from you Edge Pro Essential (order 87,682) in October 2012. As far as I know the set includes the following stones: Beston 500, Bester 1.2K, Arashiyama 6K and balsa strop with boron carbide. The stone set looks much different than the one you supply in EPE now.

If I would like to extend my set of stones for EP and to order another stone which one you would recommend to add up to my set.

Thanks and regards
Alex

Hi Alex,

I would recommend a low grit stone for speeding up your work. The Shapton 320 would be a good one to add.

If you wanted a high grit stone to use after your Arashiyama I would recommend the Shapton 8K: http://www.chefknivestogo.com/sh8kglstfore.html

On the low end , consider the 150 Nubatama Bamboo. In the middle, the new Nubatama Ume speckled 2k. After the 6k stone consider the 10k Bamboo or several other 10k stones. For strops consider the CBN or Boron Carbide 0.5 micron on a Nanocloth strop.
