Thank you all for sharing all this great information!
Quick question- ok to level Shapton glass stones with silicone carbide? AKA leveling kit from Mr. Dale?

Yes the leveling kit should work just fine for the shaptons. We used to sell it but we found it to be kind of messy and oversized compared to the diamond plates like the DMT which I like better, but if you have it there is no reason to switch.

Hoodly - if you're going to be mostly flattening the EP sized stones, Mark sells a 2x6 double sided DMT plate that works great for this: http://www.chefknivestogo.com/dmt2x6diplfo1.html.
