Now that I have been sharpening with the EP stock set (Apex 4)...I will eventually look to upgrade my stones, etc...

I considered the Chosera stones, but am now thinking Shapton Glass instead.

What are some options for progression of grits? (seeing as I already have the EP 120/220/400/600/1000)

I was thinking for the Shapton GS...

320 / 500 / 1K / 4K / 8K / eventually possibly 16K

Or is there a better progression?, as I left out the 220 / 2K / 6K above...

I will be using this to sharpen a Moritaka Supreme KS 250mm as well as Wusthof Cordon Bleu knives and Wusthof Classic, some old Henckels and eventually a Konosuke HD.

Thanks!

320 to 1k is fine. No need for the 500 imo.

I'd add the 2k

So 320 / 1K / 2K / 4K / 8K ?

Also, would you recommend the Glass or the Pro for my purposes?

If you get 320 / 1K / 2K / 4K / 8K in the Glass Stones you will no longer have any desire to use the stock EP stones. Add an Atoma 140 and you'll be set.

The Atoma 140 Edge Pro? or the large plate?

Is this for flattening the glass stones or for reprofiling? If it is for reprofiling/fixing an edge, what is the advantage over using the OEM EP 120/220 stones instead?

Speaking of flattening - what is the most straightforward choice to flatten the Shapton Glass Stones once they are not flat anymore?

Thanks!

I meant the 140 Atoma for the EP. Once you have it you'll understand why you'd want it over the stock EP stones for that work. I use a DMT XXC for flattening. I'm going to get a full size Atoma eventually though.

Ok, set to make an order...is there anything I am missing in terms of stones that would be really useful?

Shapton Glass EP 320
Shapton Glass EP 1000
Shapton Glass EP 2000
Shapton Glass EP 4000
Shapton Glass EP 8000
Atoma EP 140x
Atoma Plate 140x (for flattening my EP stones and other reg stones)

Ya - got all of those when I ordered my knife and also added a stop collar to this order.

Any other items? Want to make it the last shipment of this year ;) .
