 Post subject: Lamb chop with massaman curry

A patron ordered this last night, and I thought I'd snap a pic.

Most massaman I've had elsewhere is soupy, but ours is more like a stew.
The person also ordered his lamb just flame-kissed.

Anyhow:

Lamb
-marinated in salt, pepper, oil, garlic, and ginger
-allowed to rest near grill prior to cooking
-grilled over mesquite charcoal for just maybe a half-minute (as ordered)

Curry
-potatoes boiled in mildly salted water with light soy sauce until just barely cooked (they will finish off later)
-carrots cooked on a near-smoking hot wok for just a few seconds
-curry paste and pureed onion/a little bit of potatoes mashed added
-coconut milk and a touch of fish sauce added
-potatoes finally added and it's done when them taters are

It was finished off with green onion and coriander, as well as roasted peanut or cashew upon request.

Kinda tough to give you times, by now it's just muscle memory for me. Not to mention, cooking on a wok over what seems like a jet engine, timing is tough to translate to a stovetop for me.

Looks delicious, Wish the wife didn't hate lamb. Only get a chance to make it on a special occasion like Easter.
