I don't make things anymore that I can't use a knife on, it's just no fun! :ugeek:

Oh HELL No! MY Guacamole is better than yours ;-).

I make it kind of chunky. I try to use avocados with a range of ripeness so I retain some chunks after folding the ingredients together.

It's not purely traditional but:
avocado
red onion
tomato
lime zest
lime juice
cilantro
finely minced jalapeno
kosher salt
white pepper
couple of different hot sauces

It always gets rave reviews from those who try it.

Whalebreath - I've got a really old popcorn pot from my grandma. It's got a wooden handle and a lid that locks into place and has holes in the top with a built in turner shaped like a coat hanger. It works fantastic to help keep the bottom kernels from burning. I'll try and get a quick photo.

I make it one of two ways. More often by hand with the avocados mashed with a potato masher and leaving it rustic and chunky, or if I want it super creamy I use the food processor.

4 ripe avocados
1 seeded and diced tomato
half a finely diced yellow onion
2 seeded and minced jalapenos
juice of one lime
1 finely minced garlic clove
3 or 4 tablespoons of chopped cilantro
salt
cracked black pepper
tiny pinch of cumin
pinch of coriander
tiny pinch of paprika
half tablespoon EVOO
very light drizzle of agave nectar
healthy splash of good 100% blue agave tequila, usually blanco or reposado(make sure no one is recovering haha)
