I don't usually like sweets, but my guilty pleasure is cake. Only if it's good, but when it's good. Stand back cause it's MINE.

I love a good cheesecake, although they are hard to find these days and a little more of a hassle to make.

I like to use a honey gram cracker crust...blind bake it for just a few minutes...Then put the filling back in. I like my cheese cake to be well browned on the top...I hate gooey cheesecake.

Also I love to take good bitter sweet chocolate and toasted hazelenuts...get it melted on a double boiler then spread over the top of the cheese cake...A chocolate top cheesecake with nuts is awesome.

This has lemon / orange zest and juice

I bake at a low low temperature to firm up the custard w/out browning it.

Crust is butter, gram-crackers and butter.
