Thanks! I started back in 1999 or so, so this has been a work in progress!

The knives I use the most are the Tanaka 240, Richmond Addict 52100, Tojiro ITK Bread Knife, Kono White #2 and Artifex Suji, Tanaka Nakiri and the Dojo and Fujiwara petty's.

Yup, and Randy Haas has my Kasumi 210mm Deba to check out how they do the hollow back and stuff. I don't do any sushi and I'm not even a professional chef! I just like sharp pointy things!

I use the 2 KAI Wasabi knives on my Offshore fishing trips, got tired of the carbons turning all orange and fuzzy on me overnight in the salt air. The Dexter Yanagiba is great for slicing frozen pizza's (all it gets used for) and the little Dexter is a decent cheese knife and is so dull I can cut cheese in hand and not get cut.
