Listen to the last few posts; 20 degrees is effective for your knife. I usually use my Nubutama 1200, and then my 2K Naniwa Aotoshi (green brick of joy). I will admit - I sometimes use my 5K Rika, but it's just for shiites & giggles as I'm a sucker for the mirror polish. 8-)

I use a Chosera 800, more or less equivalent to J1200, followed by rough - split - leather.

Thats ok mate no worries.

I cannot find that green brick of joy ANYWHERE

I think its out of stock here isn't it?

Any idea where else i could get it or when it comes back in?

For your Nubutama you actually use that for sharpening? Then honing on the other 2? (Rika and Green brick)?

I just use my Shapton glass stones, which I use on everything. Many ways to get the job done.

I use the Arashiyama 1k and the Shapton Pro 2k. I have a Shapton Pro 320 when needed. Have a 6k Arashiyama but only my carbons see that one. It's all about preference. Many roads will get you there.

Ive had these recommended quite a few times actually ^^

Ive heard the shaptons are excellent stones. They even sell them in Australia which is handy!
