hello there
i am a pro cold line cook.
lots of chopping,cutting and prepping .
been using mac mighty 9.5
looking for a knife with better edge retention.
price up to $200
thanx for any recommendation/help

I don't work a pro line.
I'd have a hard look at the Artifex.
The Kikuichi Performance TKC is supposed to be a top performer too.
I have a Hiromoto AS and I love it.

Without some additional traits, this will be hard to narrow down.

Lots of great sub $200 knives out there right now.

Kikuichi TKC is a great knife, as is the Hiromoto AS.

Other than those, you can throw the Goko's into the mix:
