Thanks a lot that series of videos were pretty good I like the three finger sharpness test. Apart from sharpening one or two knives a day on my stones I am working through Japanese knife imports videos so far the Korin and these have been the best for techniques . My sharpening is at times fluid now nearly two weeks into using waterstones I am still wandering off the bevels at times although that is on thinning bevels on nasty cheap knives where I have chosen a new bevel angle . The blades I am pleased to say are coming out shaving sharp without having to do much more honing than a couple of passes on newspaper.
