I appreciate the advise and the direction as where to find more information. As I was prepping a meal last night I concentrated on some of the techniques I have seen in the last week or so. Just using the techniques and not worrying about speed I still accomplished some tasks faster. I'm still far from good but am excited to keep learning and getting better. Thanks for your help!

I don't know if you cook much fish. I like the japanese knife society youtube vids. They're so detailed. I wish they had more vids.

I've been into the Stella Culinary for a while now. These vids helped me learn how to bake (still learning). Really entertaining stuff. Execution isn't absolutely perfect but principals and science are solid foundation for cooking. Also wish there were more videos available.

Good information atang, Thanks.Learning new techniques I believe will make cooking more enjoyable for me. If I gain a little speed all the better. There are a lot of guys in my family that cook(not professionally), being able to show off a little for them wouldn't hurt my feelings either! :mrgreen:

It's a good idea to add some knife techniques to the store. I'll put this on the never ending list of good ideas and see if I can do some this coming year.

Maybe we should come up with a list of things to demonstrate so I can get a to do list going.

I think it would be great to have some basic knife skills tutorials here just like sharpening skills. Things like basic pinch grips, proper ways to slice and dice...etc...etc. Like sharpening and stones, what good are good knives if you don't know how to use them. I've seen it said many times here "it's not as much the tools but how you use them."
