Well, the thinning worked very well!! Sweet potatoes felt soft when cutting thru them to make home fries out of them. Nice straight, smooth cuts!!

So between the Funayuki's, If you don't mind spending the time to thin the knife and want a nice stock handle, get the TK. The Yamashin OOTB is good to go blade grind wise, and a great candidate for a rehandle!

Very nice job on the Yamashin! Hmm, so now I have to get the TK? :D Uhm, I can't find the Tsutomu Kajihara on the CKTG site. Do you have a link?

Looks like all of the KU series are out of stock.

I haven't seen the 210mm yet, but it may be next :) I do like the profile of it though!
