Torn between these two. Suggestions wanted

Sun Feb 10, 2013 9:30 pm

Hey Folks!

So as the title say's, im a bit torn between 2 knives right now and would like some feedback from anyone who has or currently uses these. I am considering the konosuke HH 210 gyuto and the Richmond Artifex 210 gyuto(with a custom wa handle). I emailed Mark about it, and all total i'd be looking at spending around $180 for the custom artifex, and the Konosuke is $215. Now i know the steel is different, an the kono is a bit lighter but is it really worth the extra cost? Based on what ive read about them it seems you cant go wrong with a kono, but i also a own a 240 Addict and i absolutely love it! It's my go to prep knfe when i need the larger size. Asking about the 210 because i am in need of a smaller line knife. I currently have a Tojiro Dp wa, but i really am not liking the steel, hence why im looking for a new knife. Anyway's that's where im at with this matter. If you have anything you can add or suggest please do! Thanks in advance everyone! Cheers!

-Chad

I have a 210 Artifex, and a 240 Kono HH. The Kono is at least 2 steps above the Artifex. I would think that the Kono would be the way to go based on the description of where you're at. The 210 Kono HH will be much closer to your Addict (probably nicer even?) in fit, finish, and grind than a re-handled Artifex I think anyway. .

The Artifex is a great knife on it's own don't get me wrong there it's more a budget line and a great value as it is.

I've got a Kono HH 240, and love it. Haven't used an Artifex. It seems to me, though, that the strength of the Artifex is that it's a great value in a no-nonsense workhorse. By buying an upgrade version, you're just putting more money into the cosmetics. I'd prefer $200 worth of Kono, rather than $100 worth of Artifex and $100 worth of handle.

Both fine tools, though, I'm sure.

Unless you're after the fancy handle of a custom wa handled knife, the Kono is going to be a better knife.

Think about it this way, with the Artifex, you're buying a $75 knife and a $100 handle. With the Kono you're buying a $200 knife and a $15 handle.

The Artifex is awesome for what it is....$75 for a 210mm AEB-L knife that is no slouch in the kitchen. But the Kono is just better.

The Addict is more in line with the Kono...in fact I believe some of the Addicts were made by Konosuke.

Thanks for the input guy's. Adam, I hear what your saying, I dont want a fancy handle I just greatly prefer a wa handle to a western one because for me, its far more comfortable. Im starting to think I might get the artifex with its stock handle, try it out and see how I like it. If im not happy then i'll just get the kono. I dont know, lol. I just need something soon. I cant stand my tojiro anymore.

The Artifex has a pretty wa style western handle really. Not much contour to it, no bolster....you might like the feel. :)

Send it here and I'll grind that little bit of downward turn at the butt of the handle for you.....you'll never know it's a western handle. :)
