Top of the line chef knife.

Hi Mark,

Having spent a good deal of time browsing your site I must admit that I find myself a little confused, if not overwhelmed by choice...

I'm after a high quality, top end chef's knife that is well balanced, razor sharp and holds it's edge well.

From your experience and customer feedback would you be able to recommend a selection of options that I can compare?

I need more info but I can make some guesses. Please correct if I'm wrong.

Right handed
Want stainless
Don't know how to sharpen
Under $600 (total guess)
Handle style not that important

Thanks so much for the reply. The Konosuke sure looks a beautiful knife - quite captivating actually!

Can you tell me if there is anything else that compares to this within the same (or less) price bracket?

If I was to buy the 240 gyuto and the matching petty would you be able to do an offensively great deal for me?

Also, does Konosuke happen to make a matching Paring knife?

We don't carry the 210 and we have none on order.

We have some 270s coming that we ordered about 6 months ago. We also have some 210mm pettys coming too. These should arrive tomorrow or Monday.
