Hello

i new in to the Japanese knife, i live in Denmark a small country there the only knife brand i can is tojiro. and the laws dont allow us to import knife.
i able to get Tojiro Shippu 63 layers, Flash 63 layers and pro. my question is how i tojiro compared to other brands like masakage.

and whis series from tojiro will you recommend

Tojiro's are nice knives. You should be very happy with them. Masakage is a definite step up, imo though.

You're not limited to Tojiro though... There is a well respected j-knife distributor in Denmark http://www.japanesenaturalstones.com/

Okay i did not know what site, did not come up in any of my search. I will have look.
Dont know the brands he have, the only ones i have heats was tojiro and masakage.

I would buy Masakage before Tojiro if given the choice. It is my belief that they use better steel and have better craftsmanship.

Although I cannot recommend the store mark linked to (I simply don't know it to do so), many of the products they carry are quite high end and I wouldn't hesitate to buy many of them.

If you truly cannot import kitchen knives, they would seemingly be a good resource.

p.s. Do keep in mind that much of what they carry is carbon steel.

As to which of the Tojiro's.....I don't think I've seen any of those series in person.

Anything from Yoshikane and Shigefusa should be very well made.

Both of my knife purchases with JNS have been positive. Selection is limited hence why CKTG is my favorite vendor, but Yoshikane and Singatirin are indeed very nice knives. Shigefusa and Fujiwara have good reputations, though I haven't handled them myself.

I have no personal experience with the site you listed. They carry some good brands. Worth a look if they are in your area.

I have purchased from Maxim at JNS a couple of times. The knives were shipped promptly, with no issues.
The Yoshikane SKD knife I bought was a great knife, but I think that he may not be selling them any longer.
