I am looking for a cheap yanagi to mess around with at work.
Im not too familiar with single bevel sharpening so i dont want to spend too much. I have a 195mm deba but havent had to sharpen it yet.
any opinions on the Tojiro Shirogami 240mm?

I brought these Tojiro shirogami knives in since they're pretty good and a good price. They've been popular on the site with lots of customers buying them as a first 1 sided knife and to sushi line cooks. They sharpen easily and hold their edge well.
