Just got the Nakiri knife and was trying to decipher the instructions. Can you tell me the sharpening angles recommended for this knife? From the pictures in the Japanese instructions, it looks asymmetrical.

They vary a tiny bit from knife to knife so I recommend you trust the sharpie trick and not a set angle the knife company or anyone else might tell you. You can find the angle when you sharpen by painting the edge with a sharpie and then sharpen at an angle that removes the mark. Or set an angle that you like and grind until the stone grinds the edge the way you like it. That's what I do.

SCOTT <> Sharpen symmetrically or asymmetrically. Sharpen acutely for keener shorter lasting edges or obtusely for more durable longer lasting edges.
