To polish or not to polish a blade?

Hi Guys,

The two Gyutos I've polished seem to perform better than before the polish ( referring to the blade here, not the edge ). They just have less drag on the food.

However, reading online, people seem to feel pretty mixed as to whether polished is better or not.

What is your experience with this topic?

A bad grind on a mirror blade gives severe stiction........

A good grind on a mirror blade promotes the cutting performance.

Sometimes the type of food cut also plays a role, as well as a dash of technique.

I tried it on an Aritsugu A-Type Gyuto and it was a total disaster some pics:

Too many variables for me to come to a conclusion on this topic.

I've had mirror polished drag and not drag....same for nearly every level of finish.

ROOK <> THAT PHOTO IS AWESOME! I like that one better than the mirror newspaper image on the Spyderco ZDP-189... that was my previous favorite.

At first glance in those first two pictures I thought there was just a handle on a carpet....nice job rook!

Thx people.....3 days of hard dremel work all for nothing - reverted back to a 1k finish, then it work better, all boils down to the crappy geometry of the Aritusgu....

I totally agree with this. Some I polish to a high gloss others I leave the same. I have some I have soda blasted and that works real well. Peace. Jmbullman
