thinning the knife

I only have a edge pro to sharpen and a 140 atoma to flatten the stones, do you guys just lower the angle on the EP to thin the knife or does everyone here do it by free hand?

You can do it on the EP. Yes, just lower the angle

Nothing wrong with a combination of both, even if you just use the edge pro to get a feel for the approximate angle you want to ultimately thin to

Thinning is one of the things the Edge Pro doesn't do well. You are much better off doing it freehand.

You are limited to the minimum angle the EP can go to, BUT there's nothing stopping you from taking the EP stone and putting it in a stoneholder and thinning the edge freehand with the same stones. So if you are at 20 degrees per side - use the EP. If you are at the minimum of the EP, go freehand.
