10" Victorinox those things get sharp and can take a beating

I use everything I own. The carbons get a little bit babied but only because I don't want the patina to mess up.

I baby my AS laser cause it is so damn thin behind the edge I worry about chipping it by being careless. I know I'll end up babying my Kono once I finally have it in my hand as well. Gotta get over it at some point though I guess.

The first knife I bought was a $30 all stainless chinese cleaver. I babied the hell out of that knife. Still bring it out from time to time and its like reuniting with an old friend.

I baby only the edges of all of mine. None of mine look pristine. Carbon patina all over the place.

I guess I really baby all new knives for a couple hours, and ramp up from there as I see what kind of abuse/use they can handle.
