The cutting board got almost as much attention as the Gyuto, and I was contacted by a CKtG customer asking if I could make a similar cutting board. So I contacted Magnus and asked him for details about the board. He told me that he designed the cutting board himself, and would be ok with me making something similar for CKtG customers. I've attached his Sketchup rendering and a side view of his cutting board.
Mark suggested I cast the net here on the forums to see if others are interested in that cutting board.
It would be a pretty complex build, and the only way to do it cost-effectively would be to knock out a batch of boards at once. I have one firm commitment so far. If at least 4 others also buy one, then I'll do a build. The 6" wide.... ditch/channel/groove/skateboard ramp will require either CNC milling or a custom set of shaper knives. That gets expensive in a hurry.
I'm proposing a few changes to the sketchup design. If there is consensus about other changes from those who purchase a board, then I'll be receptive to that as well. Here are the initial mods:
1) Make the board out of walnut and rock maple. I don't like using mahogany for a couple reasons that aren't worth going into.
2) Make the ditch/channel/groove/skateboard ramp slightly shallower than depicted in the sketchup design, so that the thickness of the cutting board at it's thinnest point would be at least 1 3/8". From talking to Magnus, I think his actual board is thicker at that point than specified in the design, which is a good thing.
Assuming I get at least 5, I think I could do a batch of these for around $325 each plus shipping. That's more than I charge for a traditional cutting board, but not bad for a board like this.
