Not a technical review, just wanted to share some good feelings.
I have a close friend who cooks an insane amount for her family. Due to each person's dietary needs, she ends up preparing three to nine different meals each day. And for the past 5 years, she's only had one knife, a $1.50 cleaver picked up from Daiso. You won't believe the amount of force and sawing needed to get that dull cleaver to wedge apart a steak..
So I took out my Richmond Artifex Wa-Gyuto 240mm, put a nice 10/15 degree edge, and told her to have fun.
It's amazing giving proper tools to those that really need them.
