Not only that...but we have a small dining room. If we are booked for 90 people it always means at least 20-25 people are waiting and waiting at the door. Smaller menu could translate to more consistent turn overs.

Most people I talk to enjoy the food but hate the long wait...and some just don't care and will bend over backwards for the chef no matter what he does. I think transitioning to a smaller menu would be a huge step forward.

We have a freezer full of gelato that gets ice crystals and we only serve maybe 15 scoops a week average, to me that is just absurd. I could go on and on...but I've got to get to work...damn it!

I've got family in Wisconsin I'll send them over to that restaurant you mentioned in the article.
