I came to the conclusion of what type of board the purchase and who to purchase it from due to recommendations from fellow forum members.

Don't over oil the board. It can make the wood soggy. Just apply the oil and wipe off the excess after a few minutes.

Thanks for the tip Mark, I did wipe it off the excess a few minutes later. This was a pic immediately after applying the oil. I thought the sheen of oil contrasted with the wood make a great pic!
An update, I didnt know what to expect from this board performance wise. So I went out bought a lot of veggies and started breaking in the board. I was amazed at how the board reacts with the knife and food. I cut up 2 zucchini, 2 y. squash, a green and red pepper, and some potatoes. I wiped the board with a damp towel and hit it with a dry one quick and it was crazy to me. It didnt look like I cut anything on it! Now I understand this is only my first use but even at a close up look you cannot see any cut marks.
What a great piece of art, and realizing his shop is only an hour and a half away I may have to stop in some day and say hello!

Dave's advice on oiling his boards, from his website:
"Before using a new butcher block, season it to prevent staining and absorption of food odors and bacteria. Before applying oil to butcher block, warm the oil slightly. Apply oil with a soft cloth, in the direction of the grain, allowing the oil to soak in between each of the four or five coats required for the initial seasoning. After each treatment, wait about four to six hours and wipe off oil that did not soak into the wood (oxidation or hardening of the oil will take approximately 6 hours). Re-oil the butcher block monthly or as often as needed."

I think I just over oiled my homemade board:/. Just an hour before i read this thread, of course... So now it feels a bit moist. What can I do about it? Do I have to go over it with sandpaper or can I do something else?
