Tetsuhiro Hammered White#1 vs Kanehiro 240mm Gyuto

Fri Nov 08, 2013 8:10 pm

Hi:
Trying to decide between these two.
I have a Kono HD 240 Gyuto but looking for a little more heft.
I favor knives with a flatter profile.
I'm a home cook and can sharpen.
Please help me spend some $.
Thanks,
Rick

Hi Rick,

I encourage you to try the Tetsuhiro. It's a really cool looking knife and easy to sharpen and has better fit and finish. I like it a lot and think you would enjoy it. It's also thicker and heavier than your current knife.

Goko would be another good choice.

Goko or the Anryu hammered blades. Great grinds on both! Kanehiro also gets rave reviews as a workhorse as well. The Tanaka Sekiso is a bit thicker than the Kono and cuts awesomely, but is all carbon.

I have the Anryru 210 and have a mad knife crush on it. I have aways liked the Goko with its chestnut handle and white #1, but don't like the resin ferrule. My wife likes the Tetsuhiro cause it's pretty.

Please keep the opinions coming.

All good knives mentioned but I'd have to try the Kanehiro.
