Mel did a very elegant review of the 240 gyuto. I will say that that review basically says it all for this knife also. The white #1 steel at this hardness takes it to a whole new world. This petty is what I would call a tweener as far as height. There are those like Mel that prefer a 150mm at least 34mm tall and those that like the utility profile around 26-28mm. At 31mm I find this knife to be the best of both worlds. Tall enough to do the small chopping and dicing jobs but short enough for simple trimming and slicing.
This knife was CRAZY sharp OOTB and I can't even imagine what this knife will be like after it is taken to the stones for the first time. The F&F is excelllent.
The one thing you notice as soon as you see that fabulous Nashji finish and touch this knife, it has soul! You don't want to put it down! You want to cut up everything in sight! I cried when I had to put it up for the night.
If you are looking for that knife that is truly magical I recommend you try a Teruyasu-Fujiwara Nashiji.

I also own this knife and agree with Jeff on its attributes. However, I had a different experience with oob sharpness. I found after a few light uses the edge was starting to crumble. I was concerned as I had not misused the knife. Mark explained a lot of j knives are finished on a wheel and can leave a weak edge. He recommended sharpening and if that didn't take care of it he would take care of it. That was about 4 months ago and granted I'm a home cook I have been able to maintain the sharpness with stropping on my 5k rika. Howeve, as Jeff mentioned it is a tweeter in terms of height. I tend to use my petty similar to a gyuto in a lot of ways just for smaller items. For me with small hands I'm still able to fine dice garlic and shallots but I wouldn't want a knife any shorter. I find it great for slicing chx breast, steak, pork chops etc. it really is a versatile little knife.

Good review. This is one I have been interested in and keep telling myself I don't really NEED it. That doesn't change the fact that I want it. So thanks a lot Jeff.

@31mm, I agree with Chrismit29, I wouldn't want it any shorter.
