You hit the nail on the head. Everyday I have at least something in my cart. I dare not press checkout though xD

I have this knife as well, and I will say that with improper use the edge will chip quite a bit, so if you are planning on cutting very hard items, or hitting any bones on it what I did was put a micro bevel on it for added strength. If you want unreal sharpness but a slightly brittle edge, then dont put the micro bevel on. Overall this is one of the best knives I have in my kit, amazing for smaller kitchens especially for line service at the restaurant.

I got a nakiri from him and there's a bit of overgrind and sharpening it has revealed a very inconsistent bevel, very wide on one side near the tip. It's also a little thicker at the edge than I was expecting and the nashiji does an OK but not great job of reducing stiction with moist slices.

I do't know how much work it'll take to work away the overgrind and make the edge straighter, but I'm not looking forward to it.

Melampus: I ordered direct from the maker after a bit of discussion with him about what I was looking for. I will avoid North American retailers and their hefty shipping prices unless I have no alternative.
